Xeos has shamed me.

I have been meaning to do this for a while, so might as well now. This is a list of every drink I can make, so I can just refer back to it in the future instead of posting the recipe each time. I will leave off brands because I don't always use the same and different brands can change the taste. As I learn new drinks, I can update it. All of these should be considered starting points to be played with. It's your drink, make it how you want. I make substitutions from time to time for variety. Beware. I will be mixing metric and imperial measurements. Also beware. I like my drinks pretty stiff.

The Martini

1 tbsp dry vermouth

Top off to 100ml with good gin

1 drop orange bitters (shh...secret ingredient)

3 Blue cheese stuffed olives.

Chill a martini glass, Shake the first three ingredients over ice, place olives in glass, strain drink over.

Remember where I said you could feel free to substitute? This is an exception. "Vodka Martini" is an oxymoron. If you like this drink made with vodka, great. But it is not a martini.

The Manhattan

2 jiggers, one pony (3 1/4 oz) bourbon. Not Jack Daniels. Bourbon.

1 jigger (1 1/4 oz) good sweet vermouth. Vya, Carpano Antica Formula

2 dashes angustora bitters

2 luxardo cherries. Use the good ones, save the flourescent red Collins ones for your grapefruit.

Chill a martini glass, Mix the first three ingredients over ice, stir, place cherries in glass, strain drink over.

The Negroni

Chill a martini glass.

Stir equal parts gin, good sweet vermouth and Campari over ice.

Strain into chilled glass.

Garnish with a large orange twist.

You may have noticed, I stir dark liquors and shake clear ones. I find that shaking dark liquors makes the drink cloudy and I don't like that. many people disagree with me, but they are wrong. Like many of the drinks on this list, this one can be served on the rocks too.

The Boulevardier.

Same as the Negroni, but substitute bourbon for the gin and use two parts bourbon to one part each vermouth and Campari. I like this one in a chilled double old fashioned glass. I don't know why, I just do.

The bourbon gives it more sweetness than the Negroni, but it is still very balanced.

The Margarita

Not the slushy version. This is stolen from Rick Bayless. Steal from the best, right?

2 oz silver (or resposado, but I like silver) tequila.

1 oz Cointreau

4 tsp lime juice

Chill a martini glass, cover a small plate with kosher salt, rub the rim with a little lime juice, dip in the salt, shake all three ingredients over ice, strain into martini glass.

The Sazerac

1 tbsp 1:1 simple syrup. I use demerara for extra caramel flavor, but white sugar is fine.

6 dashes Peychaud's

2 dashes angostura

Rye

Absinthe

Twist of lemon

Chill a double old fashioned glass, put syrup, bitters in 1 c measuring cup with metric measures, top off to 100ml with rye, rinse glass with a splash of absinthe, discard (drink) absinthe, run twist around rim of glass, throw in glass, stir rye mixture over ice in mixing glass, strain into double old fashioned glass.

Veaux Carre

Now we are getting fancy.

3 dashes Peychaud's

3 dashes Angustora

1 oz sweet vermouth (do I need to specify "good?")

1 oz cognac

1 oz rye

2 1/4 tsp benedictine

1 twist lemon

1 luxardo cherry

Chill martini glass, stir first 6 ingredients over ice, Place garnishes on pick, then in glass, strain drink into glass.

The Vesper (yes, from Casino Royale)

3 oz gin

1 oz vodka

1/2 oz Lillet Blond

1 twist lemon

Chill martini glass, Shake first three ingredients over ice, strain into glass over lemon peel.

That's about it for things I make regularly. I can make a few more, but these are the basic Friday night drinks that sometimes get drafted onto other nights. Enjoy!
